Comfort Food

Chicken and Dumplings


There are days when the weather or events dictate the menu...Saturday was one of those days: cold, blustery sprinkled with snow flurries. The day called for a giant pot filled with the bubbly goodness...Chicken and Dumplings and homemade cookies. 
We feasted, we laughed chasing away the gloomy winter chill.

  2. Oh I was hoping you were sharing your recipe. I was going to throw it in the crockpot for dinner. I am off in search of a chicken and dumplings recipe now. MMMMMM, you made me hungry while I was eating breakfast.

    This is SO Easy to make!
    1 Box of Annie's Dumplings [red box in the freezer section at grocery]
    7 boiled eggs
    2 cups diced celery
    2 cups minced onions
    1 - 2 tablespoons parsley
    1 teaspoon celery seeds
    3 14 ounce cans reduced sodium chicken stock [or you may use the stock from your chicken...I like to add more to make it 'extra savory']
    Water
    The only tricky spot.... how much chicken you prefer... :) For this batch I boiled about 8 chicken breasts until it literally fell apart. Usually I boil 2 large hens until they fall apart, then discard bones and skin.

    To prepare:
    Boil chicken until it 'falls apart'.
    In separate pot boil eggs.
    Cut celery and onions.
    Take prepared chicken, add celery, onions, celery seed, chicken stock and water. Adding water until it looks like chicken soup [ it will thicken when you add the dumplings]...once it gets all bubbly add chopped boiled eggs, parsley and Annie's dumplings [frozen]. You can add more water as needed if it gets too thick.
